Haha, this is one of my older recipes before I starting putting actual measurements for the stevia. Usually with a pan of chocolate brownies like this I end up using between 1/8 and 1/4 tsp. of THM Pure Stevia Extract Powder. Start with 1/8 (which is 4 doonks) and then taste as you go. You definitely don’t want to over-sweeten or you’ll get a stevia aftertaste. In chocolate desserts like this, it’s actually a good idea to use a blend of sweeteners for a more rounded taste, so if you have something besides straight stevia, I would use a mixture to achieve the desired sweetness.

These look great! Quick question….is there an olternative to oat fiber and can you eat them right away or do you have to wait until you out them in the fridge? Thanks!

You really could use almond, golden flax, or coconut flours in place of oat fiber, but you may have to mess with the amounts. If you use almond or golden flax flours, I would suggest adding two-three extra tablespoons because oat fiber is a very dry flour. If using store-bought coconut flour, you could probably keep the same amount. Play around with it and if you make them, let me know how they turn out. Yes, they do need to be refrigerated before eating. I mean, you can eat them before refrigerating but they’re not nearly as good.
